A is for Aaloo Bhujia - (Potato Curry)

Spicy Potatoes - One of the most widely used and easy to cook vegetable, worldwide is potatoes.

WHAT WE USE

1. Potatoes - 2 lbs.
2. Shan Aaloo Bhaji (spice mix) 2/3 pack.
3. Yellow onion - 2 medium size and finely chopped (if you have a chopper then don't hesitate to use it).
4. Fresh tomatoes - 3 medium sized and finely chopped (go ahead and use the chopper).
5. If you like then throw 2 cloves of minced garlic also or else forget it.
6. Cooking oil.
7. Finely chopped cilantro, at the end to garnish.

HOW WE COOK

* Keep stirring finely chopped onions in oil, over medium-high heat, until the onions become translucent.
* Add chopped tomatoes, Shan spice mix, potatoes and about 1 glass of water, on high heat.
* Bring to a boil, and then reduce the heat, cover it and let it simmer, stirring it occasionally. It should take you 15 to 20 minutes before it thickens and potatoes start becoming soft.
* Turn heat to high and stir occasionally.
* Once you feel that potatoes are soft (remember you want little bit of texture not just soft mashed potatoes), take it off the heat.

SUGGESTED SERVING

* Add fresh cilantro for decoration and taste to the top.
* For added taste, squeeze fresh over the curry, to your taste.
* Tastes good with Chutney.
